Our Story: When researching global food systems for a university course, our team stumbled upon the concept of European Geographic Indicators, a regulation designed to protect and amplify foods and beverages that are steeped in traditional production techniques in specific geographic areas. For example, parmesan cheese is actually a protected term that should only commercially be used to describe Parmigiano-Reggiano cheese produced through a very specific process in a very specific parts of Northern Italy. Just like Parmigiano-Reggiano, thousands of goods across Europe are protected. In a world of mass commercialization with increasingly shorter attention spans, the European Geographic Indicators are the antithesis and are critical in supporting numerous generational food producers in Europe.

The opportunity arose for our team to travel to Italy and Switzerland to learn about the benefits of European Geographic Indicators. Expecting to see crowds and heavy demand for experiences centered around these protected food products, our team was taken aback when we learnt that these incredible food products often go under the radar. After several weeks of exploring a range of products, from Balsamic Vinegar attics in Modena to Walnut Oil mills near Lake Geneva, we realized that the way in which we travel has changed forever. Not only were these experiences delicious, we met incredible families, friends and business partners that poured decades into the art of heritage production techniques. Their stories, passion and warmth was unmatched when compared against any other tourist ‘experience’ out there. Truly, these encounters took us off the beaten path and were an experience that somehow resets, relaxes and inspires all at the same time.

ATLAS is our attempt to recreate those moments for other travelers looking to connect with a place on a deeper, more authentic level. Above all, ATLAS is our attempt to celebrate the producers, their heritage, their products and their stories.
